  • Introduction of the owner chef
    Born in Osaka Prefecture in 1987.
    I worked in sales but left my job to pursue my dream of owning a restaurant.
    I spent two years at a fish specialty restaurant and another two and a half years at a shellfish specialty restaurant to learn techniques and management methods.
    I opened my restaurant in October 2019 and realized my dream.
    I spare no effort in achieving my goals, and I do not neglect meticulous management.
    I am also passionate about training the next generation, such as passing on my skills to many people.
    The dishes that come from my hands continue to make guests smile today.
  • Carefully selected ingredients
    Tuna that is purchased in 5 to 10 kg and dried and aged in a block. Contrary to its crispy surface, the inside is moist. Since the umami is tightly sealed, a wave of bliss will wash over your mouth when you eat it.
  • A glamorous consistency that resonates with both the eyes and the tongue: "Botan shrimp."
    A vivid appearance of consistency. By showing the ingredients before serving, it seems that guests are amazed by its beauty. You can enjoy the deliciousness of the sweet shrimp, which has its flavors brought out, and the exquisite balance of the fragrant shiso.
