The owner, who has studied at famous restaurants, makes a variety of unique and creative sushi while maintaining the Edo-mae tradition.
He procures seasonal ingredients, mainly local products, and highlights their attractiveness with a delicate touch.
Sake is mainly local sake from Ishikawa Prefecture, including rare limited-edition sake.
The restaurant has only 10 seats at the counter, where you can see the chef's hands at work, allowing you to enjoy a live performance.

Signature menu

  • squid
    Fresh squid is cut into three thin slices and finely sliced to create an exquisite texture.
    The more you chew, the richer and sweeter the taste spreads in your mouth, and the aroma of the shiso leaves sandwiched in between provides a refreshing accent.
  • northern shrimp (Pandalus borealis)
    The sushi chef's skill is to work with high quality ingredients to bring out their best flavor.
    The amaebi is marinated in soy sauce to remove excess water and enhance its flavor.
    The salted egg and miso (soybean paste) on top add richness to the dish.
  • mid-sized konoshiro gizzard shad (i.e. about 15 cm in size)
    Shiny and shiny kohada is a typical example of Edomae-zushi.
    The fresh taste and texture are emphasized by slightly shallow closing.
    The rice, made with red vinegar, has a gentle flavor with a low acidity, and is perfectly integrated with the fish.
