  • Wagyu Rib Capri Tartar
    A part of the ribeye called kabuli is pounded and combined with caviar. The caviar comes from France and is made with a low salt content. The fat is pounded together with the caviar, and the balance between the nettiness and the saltiness of the caviar is a dish to be savored.
  • Grilled Wagyu Beef Tongue
    One rare Wagyu tongue is used per day. The softest part of the tongue, called tangen-moto, is cut into thick slices and grilled slowly while resting over a charcoal fire. The crispy texture, exuding fat and meaty flavor can only be experienced here.
