We offer 'New Edomaezushi,' a fusion of aging sushi that significantly enhances umami through a combination of Japan's proud freshness preservation technology and aging and fermentation techniques, along with Hakata-mae sushi and Edomae sushi. Please enjoy our meticulously crafted sushi and side dishes.
Our aging technology has been honed through direct instruction from the owner of a renowned restaurant in Azabu-Juban, and has been practiced in the field since 2017 as a "genuine" aging technique.
In addition, a paper on aging, researched in collaboration with Tokyo University of Marine Science and Technology, received the Japan Fisheries Society Paper Award for the 2nd year of Reiwa.
The essence of our New Edomaezushi proves the causal relationship between aging, the craftsman's intuition, and the deliciousness of umami.
