Using carefully selected ingredients from ports all over the country, we prepare dishes that maximize the deliciousness of Japan's seafood. Of course, we also pursue harmony with vinegared rice. Additionally, the owner personally visits sake breweries and wine cellars to provide a sushi experience where you can enjoy pairings tailored to the ingredients.

Please also pay attention to the dishes imbued with our thoughts. A modern Japanese space where the old and the new are fused.

[JFG's Comment] When saying "O-kawari!" in Japanese, you can request a second helping of your favorite sushi from what you've eaten that day, making it a place to experience the Japanese language. "O-kawari" means "to have the same thing again" or "to request an additional serving" in Japanese. It's a convenient expression used when you want to enjoy something again or when you'd like to request more.

Me and my wife both had an incredible dining experience. The atmosphere was cozy and traditional. Only 9 seats at the bar. Our Server was attentive, making sure my wife didn’t run out of drinks. Typically, multiple groups of customers attend at the same time, yet the Sushi Chief accommodates different groups showing up 15-20 min apart, and their difference in eating speed. The service was top-notch, with a warm and welcoming attitude. The Sushi Chief was super friendly and sincere. The sushi was cooked to perfection, with fresh and flavorful ingredients. Overall, I Highly recommend Sushi Kuma for anyone looking for authentic Japanese omakase in Fukuoka. Can’t wait to come back and try more of the menu!

This was our first time eating Itamae sushi, and we were lucky enough to find a restaurant where foreigners can make reservations. The chef is very kind and gentle. And everything from the food to the drinks is wonderful. We had a pleasant dinner. Thank you for allowing us to taste these dishes that are like works of art.

Good place to be in but to a certain extent I was surprised by the relatively short course and dining time. May need some more items. And from past reviews, seems there have been very few changes on the menu from time to time. I would suggest variations

Booked this omakase through pocket concierge, price was approx 8500 yen per person which is on the cheap for a 1 star michelin restaurant. The restaurant has around 10 counter seats, bench top nice but a little bit aged, chef was nice but didn't really speak much english. Food was very presented, very tasty and fresh. Service I gave 4/5 as chef didn't try at all to engage with us at all. We ended up going to around 9 michelin star restaurants during our trip this time, and I must say this place is the least memorable for its service. However I would still recommend to others due to the price and the food you get. PS: I don't think he likes his michelin star, he puts the michelin award plush toy in the bathroom? xD
