Ginza Sushikohonten / 銀座 寿司幸本店

  • Tokyo : Ginza
  • Sushi / Sushi, OMAKASE

Founded in the 18th year of the Meiji era. A famous Edomae sushi restaurant that continues to create history in Ginza with designs suited to the times.

The unchanging taste of a long-established store. You can enjoy the flavors that have been passed down since its founding. The fourth generation is known as a pioneer who attempted the marriage of sushi and wine.

For sushi, we use a mixture of red vinegar and salt, which is typical of Edomae. Red vinegar is a mild vinegar made from sake lees that enhances the natural flavors of the ingredients. The color of the sushi rice combined with the brandy-colored red vinegar has a slight reddish hue, and since no sugar is used, it has a refreshing taste that doesn't get monotonous.

The "grilled shiitake mushroom nigiri," conceived by the second generation, is our most popular dish. Thick shiitake mushrooms are grilled to perfection on a grill and are then turned into nigiri sushi with a secret sauce.

Please make this place your top place to go for omakase! Takehiro Nakagawa pays so much attention to detail in everything he did with our dinner, as well as the atmosphere of the space, the pottery and plating used, even down to where his rice is sourced and where his food is from. One of our first dishes used dried persimmons that his mother carefully turned every single day for a month. His pairings are perfection. Everything he made was carefully considered, and he told us how best to have each piece of fish or how to enjoy each dish. He even told us how he prepared some of his fish to understand the depth of flavor we were experiencing. Him and his assistant were on top of our beverage refills and plating changes, and made it seem effortless and seamless throughout the meal. Everything was super fresh, delicate, absolutely delicious and very memorable. This was our first omakase experience and we could not have been happier with our choice! I do recommend you reserve on Tabelog in advance (I would have done my review there but it seems I am unable to, so that's why I'm doing it here). Whenever we make trips back to Japan, we will be going back here every time! Very personable, very funny! Do not let him fool you, his English is better than he says it is! Our dinner here has been our favorite experience on our first trip to Japan!

We went to Kitashinchi Sushi Senkodoh for a birthday celebration on our Japan trip. It was absolutely wonderful, very reasonably priced sushi, we paid $130 AUD (13,000 yen) per head at it was the perfect amount of food but there are cheaper options starting about 6,000 yen to 18,000 yen set menu or general menu options. The fish was so fresh, great service from chef and waiters - patient with us as we only spoke English and used google translate to help us understand the menu. It was quite restaurant with a calm atmosphere. Would definitely recommend and will be back when we are next in Osaka.

Was told to do omakase for sure and found this on the web as top 10 omakases in Osaka. Hiro-san was very welcoming and a great host. Thank you for all your years of training and for cooking for me tonight!

Food was excellent, atmosphere was great. Our chef was very friendly and enjoyable to talk to, made us feel very welcome. Expensive but reasonable considering the quality of the food. Would definitely recommend this place to others.
