The beautiful workmanship of the chefs creates sushi that is full of creativity and ingenuity.
Sushi rice is made from a combination of two types of rice and cooked in a kettle, and the sauce is simmered for a week.

They use only the finest ingredients, such as natural fish, laver from Ariake, and ultra-soft water from beneath the Sakurajima volcanic zone.
We pursue the ideal taste with our superior technique and sense of beauty, without allowing any compromise.

The restaurant can be reserved for private parties of five people or more, and its modern interior with wood and stone is impressive.
Water flows in front of the counter seats, where you can wash your fingers after picking up sushi.

This quiet hideaway in Roppongi attracts a crowd of genuine food lovers tonight as well.

  • mid-sized konoshiro gizzard shad (i.e. about 15 cm in size)
    The craftsman adjusts the amount of vinegar and salt, and the way the knife is inserted, depending on the size of the fish, to create the most beautiful shape possible.
    Sushi rice and kohada are in perfect harmony.

    Tender conger eel seared to perfection, the rich sauce that has been continuously added for 15 years, and the fluffy sushi rice all come together to create an exquisite taste.
    The sauce, which has been simmered for a week, is as smooth as syrup and enhances the flavor of the elegant conger eel.
