Tamura beef is the highest quality wagyu, raised only from purebred Tajima cattle females.
The unsaturated fatty acids (oleic acid) found in Tajima beef contribute to its flavor and aroma.

The sunken hearth maintains a high temperature throughout the entire oven-like space, utilizing direct fire from hot coals, radiant heat from far-infrared rays, and convection and radiant heat from the heat-retaining bricks, allowing for high-temperature and even cooking of the meat.
The surface will be crispy, while the inside will be very juicy.

    Tamura beef is the highest quality wagyu, ideal for fattening with only prized pure Tajima cattle and virgin females of the Tajima lineage. The number of livestock raised is always over 2,200 heads. The excellent characteristics of these females lie in the quality of the meat, as well as the quality of the fat and its pleasant aroma. The unsaturated fatty acids found in Tajima lineage cattle, especially oleic acid, are the key factors that enhance the flavor and aroma of the beef.
