Tamura beef is the highest quality wagyu, raised only from purebred Tajima cattle females.
The unsaturated fatty acids (oleic acid) found in Tajima beef contribute to its flavor and aroma.
The sunken hearth maintains a high temperature throughout the entire oven-like space, utilizing direct fire from hot coals, radiant heat from far-infrared rays, and convection and radiant heat from the heat-retaining bricks, allowing for high-temperature and even cooking of the meat.
The surface will be crispy, while the inside will be very juicy.
