A hidden sushi spot in Shinjuku West Exit. A rich umami experience crafted by a Michelin-starred restaurant.
You can enjoy authentic sushi quietly standing amidst the hustle and bustle of Shinjuku. It creates innovative new dishes rather than sticking to the traditional Edomae style.
The owner, who trained at a Michelin-starred restaurant in Ginza and honed his skills at various Michelin establishments, offers exquisite dishes that incorporate concentrated umami and advanced techniques.
In particular, I highly recommend trying the tuna. Carefully selected natural bluefin tuna has all the sinews and blood clots meticulously removed with tweezers, achieving a melt-in-your-mouth texture through meticulous preparation.
