Located a 2-minute walk from Ginza Station and also close to Shimbashi Station, "Sushi Kiyoshi" is an esteemed establishment specializing in authentic Edomae sushi, led by a chef who has trained for 25 years at the renowned Ginza Kyubei.

All seafood used is carefully selected to be natural, with the chef personally visiting fishermen nationwide to procure the highest quality seasonal ingredients directly.
The craftsmanship shines through in meticulous techniques such as nerve-stunning to maintain freshness and aging to enhance umami.

For the rice, three carefully selected varieties from different regions are used. Each is paired with the optimal white vinegar, rosé vinegar, or red vinegar to achieve harmony with the toppings.
The vinegar and rice are balanced to highlight the natural aroma and flavor of the rice.

Each piece is made with sincere respect for the ingredients, maximizing their inherent qualities.

  • Exquisite sushi rice woven from three types of rice and three types of vinegar
    The sushi rice uses three selected types of rice: "Yuki Hotaka" from Kawaba Village in Gunma Prefecture, "Koshihikari" from Kyotan-gō City in Kyoto Prefecture, and "Ofukume" from Iinan Town in Shimane Prefecture. These are combined with three types of vinegar: white, rosé, and red, to provide sushi rice that pursues harmony with the toppings. The combination of rice and vinegar creates a delicate flavor that enhances the individuality of the toppings.
  • Savor the exquisite tuna and seasonal ingredients.
    We use premium quality tuna sourced from the specialized wholesaler "Yama Ko." In particular, we use the part called "Haraue Ichiban," which is located closest to the head on the belly side, to offer a superb dish with a perfect balance of flavor and fat. Additionally, seasonal seafood and vegetables are also appealing in our nigiri and exquisite dishes.
  • A special moment in a calm space.
    The store features a white wooden counter and fully private hori-gotatsu style rooms that can accommodate between 2 and 4 people. In a calm space with a total of 13 seats, you can enjoy your meal leisurely while watching the craftsmanship unfold in front of you. It is also perfect for important occasions such as business meetings and anniversaries.
