A feast of salt and oil created by a world-class chef!
Fresh fish caught in the Shonai coast of Yamagata, the kingdom of food. Over 50 types of oils and over 100 types of salts from around the world. What is created with carefully selected ingredients and the chef's unique theory is "oil sushi" that uses no soy sauce at all.
The oils and salts simply and delicately bring out the maximum flavor of each ingredient. With some seasonal exceptions, ingredients are fundamentally delivered directly from the production area.
In some rooms, you can see Tokyo Tower or the Skytree.
Pairing with wine enhances the flavors of the ingredients even more. Please enjoy a taste experience that cannot be found anywhere else.
