Fresh fish caught in Shonai Beach, Yamagata, the kingdom of food.
Over 50 types of oils and more than 100 types of salts from around the world.
Created through carefully selected ingredients and the chef’s unique theory is "Oil Sushi" that uses no soy sauce at all.

Using oil and salt, the flavor of each ingredient is brought out simply and delicately to the fullest.
Except for some seasonal items, ingredients are basically delivered directly from their production areas.

Depending on the room, you can see Tokyo Tower or the Sky Tree.

Pairing with wine further enhances the taste of the ingredients.

    You can enjoy all of our shop's original worldview alongside premium ingredients. Please indulge in our top-tier premium course.

    For our signature dishes, we offer vegetable bathed in warm garlic sauce delivered fresh from our main store in Yamagata, as well as dishes incorporating elements of Italian cuisine from Alchechiano.

    In our sushi section, we serve lean bluefin tuna marinated in tomato seed and salt sauce, and simple seaweed rolls made only with rice, black pepper, and oil, allowing you to enjoy the first seaweed from Ariake on that day's fresh ingredients.

The highlights include dishes featuring fresh vegetables delivered from the main store in Yamagata in a bagna cauda style, as well as Italian elements from Alchecciano. In the nigiri section, you will find red tuna marinated in tomato seed and salt marinade, and simple sushi rolls made with just rice, black pepper, and oil, allowing you to savor the best seaweed from Ariake, all prepared with the day's ingredients.
