Respecting the old while embracing the challenge of the new.
Our promise to our customers is centered around seasonal fresh fish, carefully selected rice, and our unique red vinegar.
We use Koshihikari rice from Fukushima Prefecture, adjusting the water content and cooking time with each season to create a firmer texture that enhances its elasticity and sweetness.
The red vinegar is made solely from sake lees that have been aged for ten years and is an original product from Imezu in Ehime Prefecture.
As we aim to create a relaxing atmosphere for our guests, we invite you to enjoy a delightful time at our establishment.
