The owner began his training at Kobe Kitcho in Osaka, a Michelin-starred restaurant, and continued his apprenticeship for over 10 years in places such as Yamaguchi and Okayama.
In 2019, he opened Meishu Hirao.
The dishes he creates, based on extensive culinary knowledge, incorporate elements of French and Chinese cuisine from time to time, constantly evolving traditional Japanese cuisine.
