We source Tajima lineage Tamura beef from Tamura Livestock, the creators of Kobe beef, through the Tokyo market. By aging the meat for 1 to 2 weeks from the drying process, we maximize its umami flavor. The meat we provide is characterized by a low melting point, resulting in a smooth mouthfeel.

For non-vacuum-packed offal, we carefully select fresh, flavorful red and white meats, black-haired Wagyu tongue, and harami from Omi beef, Ohashi Farm's Shiretoko beef, and Tamura Livestock's Kobe beef and Tamura beef.

By personally visiting and thoroughly inspecting the sources, we use only the finest ingredients, embodying an uncompromising commitment to quality.
