The store owner who flew from Japan to NY has become independent in the admired town of "Nihonbashi."

As you pass through the noren, you are greeted by a faint scent of cypress. Inside the store, the sound of the owner’s wooden sandals resonates on the overwhelming cypress counter.

The owner, from Hachinohe City in Aomori Prefecture, pursues local ingredients meticulously. The sushi rice combines the mature red vinegar and salt with Yamagata's Koshihikari, which stands out with its grains. The sushi made by Mr. Kimura, who believes that every ingredient has its own temperature, is crafted with love for each individual ingredient. Please visit our store, which stands in Nihonbashi.
