We control the freshness of the fish to maximize its umami and combine it with our unique rice.   • Hiroki Ajuta - An Exceptional Curiosity
    At 20, I began my journey in the culinary world, strongly captivated by the energetic sushi chefs at the counter, and at 25, I started my training at a sushi shop. I honed my skills at sushi restaurants, including those listed in the Michelin Guide, and in 2021, I opened "Ajyuuta." I am committed to using only top-grade fish sourced from across the country and spare no effort in preparation to maximize the umami, combining them with my unique rice that I only serve after I am completely satisfied. By adding a contemporary approach and extra effort to the traditional Edomae sushi techniques, I create my own unique sushi.

    The sushi rice is prepared with a unique blend of two types of rice, cooked to match the timing of the sushi preparation, and seasoned with four types of vinegar and two types of salt. Each ingredient is meticulously handled, with thorough temperature management tailored to each individual ingredient. Different fish are processed in specific ways, and the best flavor is sought through unique preparation methods. In addition to taste, we ensure that the experience is enjoyable in terms of smell and touch by maintaining precise temperature control.
