While based on the traditional Edomae sushi inherited from my training place, please enjoy our sushi that is suited to the modern era.

While maintaining the traditional Edomae style inherited from my training, I believe that "food" encompasses various elements, including the changing atmosphere and worldview of each era.

Our daily goal is to create sushi that brings smiles and satisfaction to our customers.

The "omakase" style, where the selection of fish for the sushi is entrusted to the chef, is fundamental, but we also provide options for additional or special ingredients that you may want to enjoy.

The seasonal sake offerings are handled by our sake sommelier, who will recommend selections for you. Additionally, we also have special sake available.

    We will offer a complimentary drink of your choice (such as sake or beer) exclusively for those who made a reservation through JapanFoodGuide. Please select your drink upon your visit.

    The course will include appetizers and sushi. We will serve you over 20 dishes of sushi and seasonal cuisine.

    Please refrain from coming to the store wearing strongly scented perfumes or cosmetics. Since it will be a simultaneous start, if you arrive late, the service will begin from the middle of your course. Please avoid entering the store wearing tank tops or sandals. Children aged middle school and above can visit if the reservation is for a private party. Photography is allowed, but we kindly ask you to refrain from taking photos of people.

  • Passion for sushi
    At the age of 15, I entered the world of sushi and gained experience as the second chef at "Kazahana" in Conrad Tokyo, as well as in renowned restaurants in Shinjuku and Meguro. Using my past experiences, I have created sushi with a focus on each piece, which has gained a reputation attracting many sushi enthusiasts not only from the Tachikawa area but also from the city center.
  • Exquisite vinegared rice and rice.
    The vinegared rice uses pure rice vinegar made from ancient rice to create a refreshing flavor. The rice used is "Tsuyahime" from Yamagata Prefecture. Its large grains stand out with sweetness and umami, maximizing the deliciousness of the sushi.
  • Selected ingredients
    Fresh fish is directly delivered from all over Japan.

    Tuna: Premium products sourced from the famous Tsukiji restaurant "Hinanaga."
    Fukuoka's red sea urchin, Aori squid, and Amadai.
    Hakodate's purple sea urchin and Matsukawa flatfish.
    With a focus on seasonal ingredients and careful preparation using traditional Edomae techniques, you can fully enjoy the charm of traditional Edomae sushi, including Kohada, Kasugo, and simmered anago.
  • Special space
    The store has only six counter seats made of hinoki cedar. Emphasizing a live feel, the cutting board is placed at a height higher than the counter. You can enjoy a relaxed and luxurious time while watching the artisan's hands at work.
