Because heifers have not experienced childbirth, their muscle and bone development differs from that of bulls or cows that have given birth. Therefore, the meat fibers are extremely fine, and the texture is astonishingly smooth. The melt-in-your-mouth sensation the moment it enters your mouth is a bliss unique to heifers.
