Our restaurant, run by a chef who trained for three years at a long-established sushi restaurant in Fukuoka and nine years at a renowned establishment in Ginza, has received two Michelin stars for three consecutive years. With the concept of "a place where customers can smile," we offer heartfelt Edomae sushi. We hope that everyone, regardless of age or gender, who loves sushi can enjoy Edomae sushi at their leisure.

As my mentor said, "sushi is determined not by the hand-shaping but by the preparation," each step, from the selection of rice grains to the creation of "nigiri sushi," significantly affects the flavor of the sushi. From rice selection and blending to seasoning with vinegar, choosing ingredients, and the final moment when customers enjoy their meal, we pour our soul into every moment.

Since all reservations will start simultaneously, if you are late or leave partway through, we may not be able to serve some parts of the course.
