Just off the Nishiazabu intersection, in the basement along Gaien Nishi-dori, you will find exquisite sushi crafted by a chef who honed his skills at a reservation-only sushi restaurant in Osaka's Kitashinchi. He personally selects Japanese sake and wine to pair with the dishes.

The entrance features a wall resembling armor, and inside, there's a 6-meter-long ginkgo counter with a unique wall made from traditional Japanese materials. Enjoy a special time in a space that embodies natural traditional beauty and tranquility, along with gently flavored sushi.

Please indulge in a course of about 20 dishes, where sushi and appetizers are served alternately, including soup and dessert. The sushi, made with carefully selected seasonal ingredients and subtly flavored vinegared rice, offers a gentle texture that won't tire your palate. The rice used is a large-grain variety called Hatsushimo from Gifu Prefecture, with adjustments made daily to the water and cooking method to highlight its firmness and sweetness.

The vinegar is a blend of seven types of red vinegar, combined over several days based on taste, along with a touch of tangy rice vinegar. You can enjoy carefully crafted appetizers that showcase creativity.

    A chef's course featuring approximately 18 dishes, starting with a welcome drink, followed by alternating sushi and dishes, and concluding with soup and dessert. The skilled artisans, who continue to hone their craft, offer exquisite dishes that fuse traditional techniques cultivated at hard-to-book renowned restaurants in Kansai with youthful sensibilities.

    The sushi features seasonal ingredients carefully selected with a discerning eye, paired with vinegared rice made with red vinegar, resulting in a gentle texture that is easy to enjoy without fatigue. Each dish showcases the brilliance of traditional Japanese culinary techniques.

    Our pairing of Japanese sake or white wine, tailored to the dishes that change monthly, has also received much praise.
