The now-standard style of eating with "soba inside" and a special spatula for okonomiyaki sauce actually originated from "Mitchan."
At our restaurant, you can enjoy the Hiroshima specialty okonomiyaki, featuring the now-typical "soba inside" and the style of eating with a special spatula for okonomiyaki sauce. All of these ideas come from our unique concept.
Having walked alongside the history of post-war recovery, we have become the perfect izakaya for lunch and dinner in Hiroshima city. Our commitment is to ensure a consistent taste by having multiple people grill the okonomiyaki together. We eliminate variations in the grilling process to provide the same delicious taste to all our customers.
We use fresh cabbage every day and change the way we cut it according to the season and condition to minimize variations in texture. During holiday periods, we use about 1 ton of cabbage to steam and grill it fluffy in the batter.
