The pork is aged at a low temperature to maximize the flavor and tenderness of the meat.

The pork is wrapped in special bread crumbs and carefully deep-fried.
We are particular about the frying method. First, the pork is cooked slowly at a low temperature to prevent the bread crumbs from hardening.
Once removed from the oil, the meat is allowed to rest in order to preheat and raise the temperature of the center of the meat.
Finally, the meat is crisply fried in hot oil!
