  • Today's fresh fish carpaccio with plenty of colorful vegetables
    Most of the 15 to 20 kinds of vegetables used are organic vegetables from Shibakai Farm in Chiba Prefecture.
    Fresh fish is purchased directly from various places or from Tsukiji.
    We mainly use white fish, but sometimes we use blue fish.
    We consider total balance.

  • Cold thin spaghetti with fresh sea urchin and special tomatoes
    The sea urchin is sourced from different suppliers seasonally to deliver the same taste throughout the year.
    The addition of shallots gives the dish a sharp texture and aroma.
    To finish the dish, the juice from the clams is boiled down and a little fish sauce is added to give it a Japanese flavor.

  • Savory baked eel and taro terrine with white wine sauce
    A terrine of chunky taro and richly flavored simmered taro, intertwined with thick eel.
