We compare fresh fish at the same Toyosu Market as the Omotesando main store and offer the finest selected ingredients of the day prepared with traditional techniques. We carefully examine each fish, which can greatly vary depending on the arrival conditions. We adjust our cooking methods in detail according to the type, showcasing sushi and sake appetizers that fully bring out the flavor of the ingredients.
