Uniquely rare in the Kanto region, we use the special Kousaka chicken, a rare breed raised by a genius poultry farmer from Tamba, Hyogo, known for its ability to be aged. We carefully select these rare ingredients and skillfully cook them using both indirect and direct heat depending on the ingredient and cut, serving them with exquisite grilling.
