The owner, who trained in sushi in Tokyo, opened a restaurant in Akasaka on June 30, 2017 (Friday) at a traditional Japanese restaurant in Kyoto.
Japanese cuisine utilizes the essence of dashi, which is its foundation, while sushi is made with carefully selected fish from Tsukiji every morning, with diligent attention paid to each piece.
