Using seasonal ingredients and high-quality seafood, the kaiseki dishes are carefully crafted to incorporate seasonal elements, allowing diners to appreciate the changing seasons. Each morning, the owner personally selects the freshest fish from Toyosu Market, ensuring they are cooked at the perfect moment for optimal flavor.

The rice is sourced directly from farmers in Hiroshima and Yamagata, featuring premium Koshihikari, while the vinegar is a special blend created in-house with a Kyoto-style influence. Enjoy the unique flavors of sushi that differ from Edo-style offerings.
