We use whole buckwheat that is cultivated in vast buckwheat fields spanning Aomori and Akita Prefectures. Our pride is in our original blend of seasonal dipping soba. We do not use any wheat flour as a binding agent, ensuring a strong, gluten-free 100% buckwheat noodle.

We uniquely blend ground buckwheat flour and the white center buckwheat flour to create our original blend for the seasonal soba, providing a refined soba experience tailored to each season.

Please enjoy the rich flavor and delightful texture of our 100% buckwheat noodles, crafted with an emphasis on aroma and crispness.

We offer classic pork shabu-shabu and seasonal shabu-shabu to enjoy the flavors of the season.
