The owner is from Kumamoto, and we purchase carefully selected fresh fish ingredients from Amakusa in Kumamoto, which are rare and can only be found in our restaurant.
In addition, we are relentless in our pursuit of sushi rice (shari).
We use aged rice that has been prepared by taking into consideration the temperature and humidity and calculating the moisture content, and then we cook it to perfection using our artisanal techniques.

SAKEDIPLOMA (Sake Diploma) is a sommelier specializing in sake and shochu.
The owner of the restaurant, who holds this diploma, has carefully selected a wide range of excellent sake from all over Japan.
In addition to our cuisine, we also offer seasonal sake, which we hope you will enjoy.
You may be able to encounter a rare sake that is not often seen.
