Located just two minutes on foot from Ginza Station and not far from Shimbashi Station, "Sushi Kiyoshi" is a prestigious Edomae sushi restaurant run by a chef who trained for 25 years at the renowned establishment "Ginza Kyubey."

The restaurant is committed to using only natural seafood, with the chef personally visiting fishermen across the country to procure the finest seasonal ingredients directly. The meticulous craftsmanship shines through in details such as the use of ikejime for freshness and aging techniques that bring out umami.

For the sushi rice, three carefully selected types of rice from different regions are used. Each rice type is combined with the most suitable types of vinegar—white vinegar, rosé vinegar, and red vinegar—to pursue harmony with the toppings. The balance between vinegar and rice enhances the original aroma and flavor of the rice.

Each piece of sushi is crafted with sincerity, maximizing the unique characteristics of the ingredients. Enjoy the ultimate Edomae sushi created by skilled craftsmanship to your heart's content.

Signature menu

  • Exquisite sushi rice woven from three types of rice and three types of vinegar
    The sushi rice uses three selected types of rice: "Yuki Hotaka" from Kawaba Village in Gunma Prefecture, "Koshihikari" from Kyotan-gō City in Kyoto Prefecture, and "Ofukume" from Iinan Town in Shimane Prefecture. These are combined with three types of vinegar: white, rosé, and red, to provide sushi rice that pursues harmony with the toppings. The combination of rice and vinegar creates a delicate flavor that enhances the individuality of the toppings.
  • Savor the exquisite tuna and seasonal ingredients.
    We use premium quality tuna sourced from the specialized wholesaler "Yama Ko." In particular, we use the part called "Haraue Ichiban," which is located closest to the head on the belly side, to offer a superb dish with a perfect balance of flavor and fat. Additionally, seasonal seafood and vegetables are also appealing in our nigiri and exquisite dishes.
  • A special moment in a calm space.
    The store features a white wooden counter and fully private hori-gotatsu style rooms that can accommodate between 2 and 4 people. In a calm space with a total of 13 seats, you can enjoy your meal leisurely while watching the craftsmanship unfold in front of you. It is also perfect for important occasions such as business meetings and anniversaries.
