It offers sushi crafted with the skilled hands of artisans who return to the traditions of Edomae sushi. The chef personally visits Toyosu every morning to select the freshest ingredients, carefully preparing and aging each one.
The rice, cooked in a custom-made kamado, melts with a subtle sweetness from the red vinegar. Please enjoy the nigiri sushi, served on a white wood board in a harmonious space between Japanese and Western styles, prepared by the chef himself.
