Our shop offers a pure sushi experience without any appetizers or ginger. The owner expresses, "Since you came to a sushi restaurant, I want you to fully enjoy the sushi," and provides sushi that is filled with extraordinary passion, diligent learning, and a playful spirit to entertain guests.
All ingredients are sourced from Toyosu, hand-picked by the owner every morning. Rather than solely relying on high-end fish, we procure excellent ingredients according to the season, resulting in encounters with unusual seafood that is rare in Tokyo. The rice we use for the vinegar is the rare "Sasa Nishiki," grown in Tome City, Miyagi Prefecture, which has a light texture and low stickiness. We blend red vinegar and rice vinegar, expertly adjusting the temperature, size, and pressing method depending on the seafood, achieving a remarkable harmony with all kinds of ingredients.
The interior has only eight seats at a hinoki counter. Whether you come with friends, family, or alone, you can enjoy a pleasant and enjoyable time. If you're looking to savor delicious sushi in Ginza without formality, please visit our restaurant.
